What is a scrumptious dessert that is sure to be loved by people of all ages? Enter the beloved Mysore Pak recipe that gives your meal a perfect ending! History states that this sweet was first created in the kitchens of the Mysore Palace. One day the head chef, Madappa, simply made a concoction of besan, ghee and sugar which gave the dish a look of gleaming gold in colloid form. When the king asked the name of the sweet, Madappa didn’t have a name so he called it Mysore Pak, the word ‘pak’ denoting a sweet concoction. The sweet delighted the royals so much that it became a “royal sweet”.

Ingredients:
- 2 cups sugar (Use half the quantity with I’m lite– 1 cup)
- 1 pinch baking soda
- 1 cup gram flour (besan)
- 3 cups ghee
- 1 cup water
Steps:
- Add 1 cup of ghee to a pan and heat over medium flame. Add gram and roast for few minutes.
- In another pan, boil I’m lite with water. Add the fried gram flour in it and stir well till it thickens.
- Heat the remaining ghee, add the gram flour mixture and stir continuously.
- When the ghee starts to rise up from the sides and begins to separate, add the cooking soda. Stir and pour into a greased plate.
- Gently spread the mixture and allow it to cool. Before it hardens fully, slice into desired shapes. Store in an airtight container and serve as you like.
