For example, a South Indian malpua recipe has lots of coconut, while the North Indian malpua recipes have lots of khoya or mawa.
That being said, no matter which part of India you’re from, if you’re a pancake lover then trying out a malpua recipe is definitely something you shouldn’t miss. Easy to prepare in your kitchen with readily available ingredients, malpuas can be made in under an hour and will melt in your mouth in less than a minute. However, since these delicacies need to be deep fried and then dunked in sugar syrup, opting to use a smart sugar like I’m lite which gives you lesser calories and requires just half the amount to be used as compared to ordinary sugar, is just what you need to prepare a heathier version of any popular malpua recipe. So, let’s get started:
Ingredients:
- 1 cup all-purpose flour
- 2 tbsps khoya
- 1 tsp powdered green cardamom
- 2 tbsps chopped pistachios
- Saffron as required
- 1 tbsp semolina
- Water as required
- 1 1/2 cups refined oil
- 10 gms readymade rabri
- 1 1/2 cups sugar syrup (Use half the quantity with I’m lite– 3/4 cup)
Steps:
- 1) Take a bowl and mix khoya, maida and semolina together.
- Add cardamom powder and mix well.
- Gradually, add water to prepare the malpua batter and keep aside for few minutes.
- Take a small bowl and soak saffron in water to make saffron water.
- Heat oil in a pan over a low flame, pour a ladleful of the mixture and spread evenly. Keep the flame low and cook until malpuas are golden from both sides.
- Remove the cooked malpuas and drain the excess oil.
- Drop the malpuas in I’m lite syrup and soak for 10 minutes.
- Drain the malpuas from the syrup, garnish with pistachios, saffron water and rabri. Serve immediately.
